Don't work too hard


The paradox of our time in history is that we have taller buildings, but shorter tempers; wider freeways, but narrower viewpoints; we spend more, but have less; we buy more but enjoy less.

We have bigger houses and smaller families; more conveniences, but less time; we have Underfloor Heating more degrees, but less sense; more knowledge, but less judgment; more experts, but more problems; more medicine, but less wellness.

We drink too much, spend too recklessly, laugh too little, drive too fast, get too angry too quickly, stay up too late, get up too tired, read too little, watch TV too much, and pray too seldom.

We talk too much, love too seldom, and hate too often. We've learned how to make a Nutrilite Hong Kong living, but not a life; we've added years to life, not life to years.

We've been all the way to the moon and back, but have trouble crossing the street to meet the new neighbor. We've conquered outer space, but not inner space; we've done larger things, but not better things.

We've cleaned up the air, but polluted the soul; we've split the atom, but not our prejudice. We write more, but learn less; we plan more, but accomplish less.

We've learned to rush, but not to wait; we have higher incomes, but, lower morals.

We build more computers to hold more information to produce more copies than ever, Playgroup but have less communication; we've become long on quantity, but short on quality.

These are the days of two incomes, but more divorce; of fancier houses, but more broken homes.

These are the days of quick trips, disposable diapers, throw away morality, one night stands, overweight bodies, and pills that do everything from cheer, to quiet, to kill. Where are we heading...?

If we die tomorrow, the company that we are working for could easily replace us in a matter of days. But the family we left behind will feel the loss for the rest of their lives.

And come to think of it, we pour ourselves more into work than to our family an unwise investment indeed.

To be honest

That was a late October evening, the very first day that I ever saw you. Love at first site you may say. What a feelings. I knew right then that I will be spending rest of my life with you. I still remember the very first smile in your face, looking down to me from your balcony. WOW, how could I forget that? That was the year 2003, my very first year in Dhaka University. Life was wonderful, lots of fun at the university and home, in the old town of Dhaka. Just came out of all male college. Got the freedom of my life. No restriction from home, I can come home whenever I like or do whatever I want to do. Just like a bird, no limit. until that ate October day, I did not a have any female friends. Did she said that she is coming down. I look around nervously. Should I just wait or should I leave. Then kindergarten happened



Due to extreme prematurity, our son had eye surgery to prevent blindness. As a result of the surgery, he lost peripheral vision in his right eye. And his near sightedness would mean glasses and close monitoring by an ophthalmologist for the rest of his life.

Such a small price to pay, in our opinion, compared to the alternative.

Cody wore glasses with great pride, making it abundantly clear to his little brothers that Mommy and Daddy also wore glasses, and wasn't it a shame that they didn't have any themselves. This usually prompted a round of begging from his siblings that it was only fair they get glasses, too.



One day, a couple of kids at recess derailed Cody's bright outlook on having glasses in his possession. One boy said, your glasses look stupid, Cody. Another kid yanked them off his face and bent them.

Cody was a timid, small child. Seeing tears well up in his eyes, as he recounted the event, wrung our hearts dry.

It was the morning of Valentine's Day. I shut off the alarm and groped around in the dark until I found my glasses. I donned them and without turning on the light, blindly made my way to the bathroom. I flipped the bathroom switch, and there I discovered why it was extra dark in my bedroom.

My husband, Stephen, had placed two red heart stickers on my glasses. And plastered all over the mismatched antique mirrors above our bathroom basins were the same stickers.

"VALENTINE," my husband had scrawled on one mirror, "I LOVE YOU THIS MUCH!"

In one mirror was drawn a stick arm with a hand pointing west. And in the other mirror was the same thing pointing east. I was chuckling under my breath, so as not to wake the rest of the household, while staring at my reflection.

I penned my response in the mirror, "Thanks to you, sweetie, I've got hearts in my eyes!"

While dressing Cody for school, he whispered, "Mom?"

"Yes, big boy?" I whispered back.

"You got hearts on your glasses."

"Yep, I sure do."

"You're

I debated it for a moment. Pulling a "stunt" like this could go either way. But the pleading in his eyes sealed8 it for me. How could I deny him what may turn out to be a fun opportunity?

"I don't see why not, big boy."

I placed two hearts on my own glasses, and together we entered his school, hand in hand, parting the crowd in the hallway on our way to his classroom.

"Ha! Look at Cody Oliver! He's got hearts on his glasses!" one observer called out.

"Oh, look at Cody! How cute!"shouted another, pointing and giggling.

When we arrived at the doorway, classmates gathered around my little guy, while I saw him trying to shake off the biggest grin I'd ever seen on his face.

"That's neat! Hearts on your glasses!"

"Cody, can I try them on?"

One little girl tugged at my sleeve. "Mrs. Oliver?"

"Yes?"

"I wish I had glasses."

I knew then without a doubt that Cody's outlook was back on track.

Just by having hearts in his eyes.

Ingredients

    1 pound(s) broccoli florets
    1 pound(s) Yukon Gold potatoes , peeled and cut into 1-inch chunks
    2 cup(s) water
    Pinch ground nutmeg
    3/4 cup(s) (about 21?2 ounces) freshly grated Parmesan cheese
    Salt and coarsely ground black pepper

Directions

    In 4-quart saucepan, place broccoli, potatoes, and water. On high heat, cover and heat until boiling. Then reduce heat to medium-low and cook, covered, 17 to 20 minutes, or until potatoes and broccoli are very tender, stirring once halfway through cooking.
    Meanwhile, preheat broiler and set oven rack 6 inches from source of heat.
    Drain vegetables in colander set over large bowl, reserving 1/4 cup vegetable cooking liquid. Return vegetables to saucepan. With potato masher or slotted spoon, coarsely mash vegetables, adding some reserved cooking liquid if mixture seems dry. Stir in nutmeg, 1/4 cup Parmesan, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
    In shallow, broiler-safe 1- to 1 1/2-quart baking dish, spread vegetable mixture; sprinkle with remaining Parmesan. Place dish in oven and broil 2 to 3 minutes or until Parmesan is browned.

    3 large egg yolks

    1 bar(s) (4 ounces) semisweet chocolate, chopped

Espresso Whipped Cream

    1 1/2 cup(s) heavy whipping cream, divided
    2 teaspoon(s) heaving whipping cream, divided
    2 teaspoon(s) instant espresso powder
    6 tablespoon(s) powdered sugar
    Grated chocolate, for garnish

Directions

    Whisk together 1 cup milk and cornstarch in a small mixing Information Security bowl until smooth.

    Microwave 2 teaspoons cream in a small microwave-safe bowl for 10 seconds. Stir in espresso powder. Place remaining cream in a chilled mixing bowl. Beat at medium-high speed until soft peaks from. Add powdered sugar, 1 tablespoon at a time, until medium firm peaks form. Add espresso mixture, beating just until incorporated. Spread over chilled pie and top with grated chocolate.

Directions

    In a medium bowl, whisk chili sauce, fish sauce, lime juice, soy sauce,Dream beauty pro and ginger; set sauce mixture aside.
    Bring 6 cups water to a boil in a 2-quart glass measure in microwave; remove measure from microwave; carefully add noodles. Place back in microwave; microwave 5 minutes longer, or until noodles are translucent and tender. Drain in a colander; rinse under cold water. Using scissors, cut noodles into 4-inch lengths. Place noodles in a bowl with carrots, mint, and peanuts; add 1/4 cup of the sauce and toss to combine. Reserve the remaining sauce for dipping.
    To make rolls: Fill a large bowl with hot water; immerse wrappers, 2 Dream beauty pro at a time, until soft, about 1 minute. Stack wrappers in 2 piles with damp paper towels between each wrapper.
    Place a lettuce leaf on lower third of a rice wrapper, lining up both edges. Spoon 1/4 cup of the noodle mixture in a row on lettuce; top with 3 shrimp, 2 papaya strips, and 2 bell pepper strips. Lift edge of rice paper closest to you up and over filling just to cover; fold in sides. Roll into compact cylinders and place on a platter; cover with damp towels. Make the remaining rolls. Serve with the remaining dipping sauce.

Directions

    Heat oven to 375°F. Line two baking sheets with parchment paper.
    Cookies: In a medium bowl, combine flour, baking powder, and salt. Set aside.
    In a large bowl, combine butter and sugar. Using an electric mixer, dr max beat mixture until light and fluffy, about 3 minutes. Add eggs, one at a time, beating until incorporated. Add the ricotta cheese, lemon juice, and lemon zest and beat to combine. Stir in the dry ingredients.
    Spoon about 2 tablespoons of dough for each cookie onto dr max prepared baking sheets. Bake 15 minutes, until slightly golden at the edges. Remove from oven and let cookies rest on baking sheets 20 minutes.
    Glaze: In a small bowl, combine powdered sugar, lemon juice, and zest; stir until smooth. Spoon about 1/2 teaspoon onto each cookie, and use back of the spoon to gently spread. Let the glaze harden about 2 hours. Pack the cookies in a decorative container.

Directions

Fun with Fondant

For someone who loves making layer cakes, my decorating skills are fairly deplorable. Sloppy, crumb-flecked swaths of frosting make up the base of every creation, a veritable ocean of sugary waves caught in a tsunami, leaping higher and rougher with every turn of the lazy Susan. Carefully fitted piping bags save me from utter embarrassment, covering up the worst of my frosting offenses, but even then my ability to create edible art is severely limited. Seashell borders? Simple rosettes? Done and done. Anything fancier and you’re out of luck. I can’t begin to recall how many grand plans for grand, sky-high layer cakes have turned into plain little cupcakes because of these shortcomings. The basic swirl is one technique I’ve managed to master after eight years of practice.


Naked Mint-Chocolate Chip Cupcakes (The “Before” Shot)

Considering my difficulty in this edible art form, I don’t know why I didn’t investigate different options sooner. Fondant has seen a huge rise in popularity over the years thanks to reality TV; every bakery special enough to get a slot in prime time seems to specialize in the stuff, peddling what seems to be more fondant than actual cake. Now it’s a startling rarity to find a wholly buttercream-covered confection, especially on the large scale. That said, it needn’t be as intimidating, as difficult, or as tasteless as detractors [myself included] frequently grouse.

Thanks to the kindness of Yolli, I was granted the gift of a few goodies to play with. Instantly, I was drawn to the enigma that is ready-to-roll fondant. Some contain gelatin, but those featured in the shop clearly list ingredients and even go so far as to label themselves as “suitable for vegetarians.” Though homemade vegan fondant is certainly possible, I wouldn’t venture to say that it’s either quick or easy. These colored rectangles of sugar dough take a huge amount of hassle out of the equation.

Even with the aide of meticulously designed fondant cutters, my first few flowers were laughably bad. I can’t say that practice made perfect, but I quickly saw the results improve with every additional petal. Most surprising of all was the flavor: Not dreadful! Sure, it’s mostly sweet and bland, but not nearly as loathsome as so many pastry aficionados claim, and quite enjoyable once dry and crunchy. Consider me a convert.

I would hardly consider myself an expert after just one attempt at sculpting, but there were a few tips that stood out in my mind as helpful hints to share with prospective sugar crafters…

    Start small, stay small. Especially when you’re modeling individual pieces, rather than working on a big sheet to cover a cake, the key to fondant success is to only work with as much material as you can fit in your hand at one time. For all six flowers I created, including all of their multiple layers, a scant marble-sized piece was more than enough to do the job. Excess fondant dries out quickly, especially once rolled thin, making it crackle when re-worked and generally difficult to manage. After about 3 – 4 hours in a dry place, the pieces will completely harden like air-drying modeling clay.

    There is definitely such a thing as being too thin. Roll out the sheets of fondant to perhaps a millimeter or two thicker than you’d like the final piece to be, because you’ll be stretching it subtly as you shape it. It may not sound like a lot on paper, but when you’re dealing with such fragile pieces, it makes a world of difference. This is especially true of bigger sheets that are used to blanket an entire cake. Corners and edges put a lot of stress on the plasticized sugar, so allow those pieces much greater girth than you would want for finer, smaller ornamentation.

    Allow yourself plenty of time. Estimate that it will take at least an hour longer than you’d prefer, and then you might make a closer estimate of what sort of time is require to complete the job. Patience is critical; rushed sculpting is guaranteed to look sloppy, no matter how experienced the sugar artist is.

    Be liberal with your use of confectioner’s sugar. Rather than flouring your counters before rolling out, it’s vital that the fondant is rolled out in confectioner’s sugar to prevent it from sticking to the counter. Excess sugar is easily absorbed into the dough, leaving no trace of the white powder in the end. Going too lightly on the application will lead to a sticky, frustrating mess. Don’t forget to dust the top of your fondant rounds, the rolling pin, and any cutting tools, too.

    Toothpicks are your best tools. Keep plenty of them on hand to help punch out shapes that cling to the insides of cutters, carve out subtle impressions on leaves, and poke indentations or holes, depending on what you want to craft. They’re cheap, accessible, and helpful in any project. You don’t need to go out and buy a whole arsenal of specialty stamps and cutters; small cookie cutters work just as well, and provide a greater range of shapes in general.

    Just try it! I’m terrible at sculpting, no two ways about it, but practice, sticking with simple shapes, and not over-thinking the process can create some sweet results.
